I think Hermione and all the other characters are different from the books mainly because of the actors playing them. They bring their own interpretations which aren't exactly going to match the book...

According to people who've been to the test screening, "The Prince's Tale" was the best scene in the movie and that Alan Rickman was great, so I'm not worried about that part.
