It's difficult, not having the funds to travel across country, but WWoHP is definitely on my list of places I want to go. Along with England/Ireland/Scotland/Wales, France and Italy.

Interesting question. I'm not really sure, but I think I'd like to take Charms, Transfiguration or DADA. They just seems so interesting as subjects (And I actually would enjoy the aspect of DADA when they learned about the creatures and such)

And to be completely honest, I'm not really sure I have a favorite quote. All of the books and movies are just so amazing. (Plus, I've always had a hard time settling on favorite anythings.)
