The professor was being terribly modest about her roses, although Phoebe wasn't horribly fussed about it. There were things that Phoebe found almost second nature when they went well and only surprising when they flopped, and perhaps beautiful roses fell in that category for Professor Flamsteed.
Or not, but regardless, if the professor wanted to move, they would move along.
Dangerous plants were much more interesting, anyway. "There are plants that are absolutely deadly to touch with your bare hands or exposed skin. You could probably handle them just fine with gloves or the right charms or... maybe just not touching them is best."
