I think the Mirror of Erised, is a way to connect Harry to his Parents. All throughout his childhood and fighting Voldemort, Harry has needed a way to connect to his parents. In the first book it is the Mirror of Erised, in the third he meets Sirius Black and Lupin who are both connected to his parents, in the fourth his wand connects with Voldemort and he see's his parents, in the fifth book there are photographs of his parents and he joins the order, in the sixth book he goes into Snape's mind and see's his parents again, and finally in the Seventh he see's his parents from the resurrection stone. I think it is a way of connecting all throughout, his deepest desire would to be to see his parents, hence the mirror of Erised. However, when he settles down with Ginny etc, he is content and his desires would change, that's why we then never again see the mirror of Erised.
