I'd have to say the UK edition for me. (not just because it is the one I bought....and have already read...twice)
It is simple,yet effective.The US cover is too garish for my liking.
I do like the Collectors edition,though.As laura-tonks said...it looks like a real spellbook.

I love the look of the collector's edition it is fantastic! I also think that the US one is great and I love the art by Mary GrandPre, I think that she is a wonderful artist. I don't really know about the UK one, I am not a huge fan of all of the blue and it just doesn't look like something that you find on a wizarding bookshlef to me, but maybe I like lots of visuals, they excite me!

See, I'm the opposite, I don't like the US editions. Though I do wish ours had chapter art like they do.
I just got my copy a few minutes ago, I really like the UK cover! Its distressed and looks very cool. Can't wait to read it!

I like the UK edition the best, I think. It just looks pretty. And then as someone stated before, the collector's edition looks like a spellbook, which is cool The US edition just looks a little... little-kid-ish to me, I guess.

I like the US Edition best, cos that's the one I have....and it follows the illustrating style of all the HP books I own right now.  But the Collector's edition is really cool too.

I personally love all three of those covers. Though, out of all of them, I'd have to say that I like the US edition a little bit more, mainly because Mary GrandPre's art is just breathtaking and it has the same style as the other US edition of the Potter books.

i love them all..
the Uk one is all blue.. i love blue although i really like the collector's edition. I just felt like a real witch holding if ever i got a hold of it... The looks of it suits the world JK Rowling has created..
hmmm.. i like the US edition either.. it's so abstract..i mean within the cover itself, everything's condensed.... it's attractive for kids with all its representation.. appearance..

I love the Collector's edition the best, because the collector's look like the ones that JK did for the limited editions for the ones who were important to her when she did the Harry Potter series.
