I think that Greyback was probably born a werewolf which would explain why he was so stuck up about it, he had to go through the same prejudice Remus did except with no friends because nobody would go near his family.

This is a very good point. I agree with the previous suggestions: he was either bit by another werewolf when he was younger, or he was born a werewolf.
I would love it if JK Rowling would confirm what the answer is.

I'm pretty sure that you can be born a werewolf.
So that might mean that Greyback is a pure werewolf.
The last name, greyback, does sound a bit were-wolfish though.

Maybe, as a kid, he was bitten but then kidnapped by the werewolf that bit him and raised to like to bite and kill people. As for why he prefers children, maybe because most children are still innocent at a young age so they taste better.

I think he was born because he got so.. Werewolfy traits and look which Lupin doesn't so I think he was born Werewolf.

He became a werewolf as soon as Rowling conceived of him. So yes, he was "born" a werewolf.
The rest is, although fun, just speculation unless she confirms in Pottermore or elsewhere.
