I think that it took Ron seeing Hermione with someone else that made him finally realize the depth of feeling he really had for her. Combine that with the unexpected change from a catepillar to a butterfly that Hermione made for the event (And in Ron's mind, for Krum, not himself) that really was the crux of his sulkiness. His jealousy was obvious, even to Hermione herself.
